Very interesting. I have noticed in recent years that when I (very occasionally) eat cheese, it seems to make me feel slightly ill for a few hours, which I never experienced before. I kept wondering if they had done something different in its production, and this article confirms it. I'm a very careful eater--read nutritional info constantly and pore over labels and so on--but more than ever the effort to ensure one is eating decent food feels like walking through a minefield. Crazy times we live in. Information like this is extremely helpful and valuable, so thanks very much for sharing it. It seems also that listening closely to what the body is trying to convey has become more critical in the absence of clear data, since there's so much that legally does not have to appear on labels. I was right to feel suspicious!
